Electric Hydrofoil - The best electronics for the job?


i wanted reach out community guidance in choosing hardware or micro controller project.  building electric hydrofoil , want use arduino various functions.  can search lift foil or jetfoiler better explanation of i'm trying accomplish.  question hardware/shields should purchase accomplish following goals?

1. bluetooth remote throttle
2. voltage , amperage monitoring of batteries , electric motor
3. motor control , throttling, pwm
4. gps readings (for speed calculations determine greatest distance/amps, i.e. range)
5. hall effect or optical rpm sensing of propeller
6. sonar sensor monitor water depth
7. datalogging analyze above data

the system run on 40-50 volts i'll need voltage regulator.

i'd find arduino/shield facilitate these goals while utilizing minimum number of components.  economical pieces of hardware can purchase require least integration make project work?  there sensors noted above difficult monitor simultaneously (bluetooth , gps example)?  there else i'm not considering?  there specific arduino should use integrate of these needs in 1 board?

you had better add rudder control, or direction control if using drive motors , want steer tank or dozer.
