Thoughts on capitalization for a menu design


i hope i'm posting correctly. things have changed lot since frequented adobe forums years ago. work part-time local restaurant in accounting capacity , asked me redesign bar menu. i'm enjoying creative process of designing pleasing menu i'm struggling capitalization of menu item descriptions. menu inconsistent capitalizing words know wrong, i'm not sure best way go.

 

all menu items have heading capitalized "salmon sandwich" , description below "grilled salmon, applewood smoked bacon swiss cheese. or, "reuben sandwich" —"classic reuben corned beef, sauerkraut , swiss on rye russian dressing." should swiss capitalized, should russian capitalized, should ortega chili capitalized?

one of casualties of forum changeover renaming of particular forum atm mac , type forum adobe type when 2 platforms (mac , windows) merged, still maintaining old typography forum.
