Latest/best way to get hardwire ethernet & MQTT


hello,
i'm looking inexpensive way send data via mqtt broker using hardwired ethernet.  it's been while since i've used ethernet, , seems there's more options there couple years ago.  used solution arduino w/ ethernet shield (wiznet w5100), w5100 isn't current anymore.  see other people using different hardware, , i'm wondering if has recommendations ethernet , mqtt?

enc28j60 w/ uipethernet & pubsubclient
w5500

can esp8266 used microcontroller either of options above?  or have use arduno uno/pro mini?
